Holiday Wine Pairing Dinner

Holiday Wine Pairing Dinner

As you prepare for the 2018 holiday season, consider a relaxing evening away from the hustle and bustle, at the Holiday Wine Pairing Dinner, held at the Summit Lodge, at Sea to Sky Gondola. Five delectable courses, featuring local ingredients, will be paired with Okanagan wines from Sumac Ridge Estate Winery and Black Sage Vineyard.

Sumac Ridge was B.C.’s first operating estate winery. For 37 years they’ve taken the finest grapes from the Southern Okanagan Valley and crafted them into delicious wines. Grapes grown in the Sumac Ridge vineyards include Gewürztraminer, Merlot, Sauvignon Blanc and Chardonnay. Black Sage wines are crafted by winemaker Jason James. The Black Sage Bench has become renowned for the quality of bold red wines it produces, and Jason’s wines showcase what happens when the right vines are planted in the right location.

Most five-course meals open with the amuse bouche, and this evening’s tasty bites will be paired with 2016 Steller ’s Jay Brut. The passed canape will feature warm brie with apricot, hazelnut and honey crostini.

The first course will feature West Coast seafood duo, halibut brandade and salmon mousse,
with herb crostini and pickled asparagus and pearl onion. The course will be paired with 2017 Sumac Ridge Sauvignon Blanc.

For the second course, there will be crispy pork belly, with caramelized onion jam, white bean puree, sautéed kale, and shallot rings. The course will be paired with 2017 Sumac Ridge Unoaked Chardonnay.

For the main course, bison wellington will be served, with baby vegetables, garlic mashed potato, and wild mushroom au jus. The main course will be paired with 2016 Black Sage Cabernet Franc.
